Harira Soup with Dates and a Lemon Wrap

Ingredients:

10g chopped onions
50g chopped parsley
30g chopped coriander
200g chopped celery
60g beef, cut into chunks
20g tomato paste
200g peeled tomatoes
200g chickpeas
100g lentils
2g vermicelli
3g flour
1g salt
1g pepper
1g ginger
1g saffron
1l water
3g ghee

  • Cut the peeled tomatoes into chunks.
  • Heat a pan on low flame, and put in the cut tomatoes.
  • Add the beef chunks, chopped onions, chick peas, lentils, celery, coriander, parsley, tomato paste and ghee. Stir well.
  • Add in the spices – pepper, salt, ginger and saffron, and let it cook for 5 mins.
  • Pour in some water, and stir. Cover the vessel and let it cook for one hour.
  • Add flour, vermicelli and the remaining water. Cook for 20 mins until the tomatoes stop foaming.
  • Serve hot with dates and lemon wrap.
